We took our daughter to the airport yesterday for a two-week trip across the country. For her, a great adventure. For us, rehearsal for her going away to college next month. My husband and son went elsewhere for dinner, so I found an avocado and tomato for a sandwich. Hmm. Just for me? Almost everything a mom does in the kitchen is multiplied by at least the number of people who are home. Now, I've seen people who go into the kitchen and make a meal, and it never occurs to them to multiply it for others. That is unfathomable to a mom. But here I was, cutting into a delicious avocado and tomato just for me. Well, that tasted amazing. A meal unmultiplied. Touch
Have you noticed that the butterflies are back? When Minda and I were kids in Wisconsin, butterflies were common. My mom says that when she was a girl, there were so many kinds of butterflies that almost every kid had a butterfly collection. When the butterfly population dwindled she felt guilty about that. For a long time we've really only seen the Monarch butterfly around here. But this year, I'm seeing many kinds. Everywhere I look they are dancing above the gardens with their fluttery, light touch. Here are two of the butterflies that visited our garden this week.
Smell The aroma of quiche! This is my easy, trusty recipe I often make for friends or potlucks. Maybe you'll enjoy it too! Easy Cheesy Veggie Quiche 1 deep dish pie crust 9" 1 small broccoli (raw), chopped - and/or mushrooms, onion, tomato 1 c shredded cheese (cheddar, mozzarella, Swiss, or mixed) 5 eggs
Approx. 3/4 c milk (not skim)
1/2 tsp salt 1/2 tsp pepper Preheat the oven to 375 degrees. Place pie shell on a cookie sheet. Load the veggies into it. Spread shredded cheese on top. In a bowl, whip eggs and milk until frothy. Stir in salt & pepper. Pour whipped mixture over veggies & cheese to fill shell. Spoon egg mixture over any dry veggies. Bake 40 minutes or until brown. Poke with knife to test that it's not too liquidy. Cool 10 minutes, cut & serve. Leftovers are delicious too!
